Gyros with Grilled Flatbread (Edit recipe)

All the flavors of a classic gyro, but none of the rotisserie required. US Wellness Meats ground lamb and beef get seasoned, pressed flat, and baked on parchment paper, giving you that same shaved, thin-sliced texture without the spit. Throw your flatbread on the grill instead of the cast iron and pile it high with tzatziki for a Mediterranean backyard feast all summer long.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat the oven to 400°F.
  2. In a large mixing bowl, combine the ground lamb and beef.
  3. With a cheese grater, grate half an onion directly into the bowl. Press or finely mince the garlic and add it in. Add the oregano, cumin, thyme, smoked paprika, and salt.
  4. Mix thoroughly with your hands until everything is evenly combined.
  5. Divide the mixture into two equal portions. Place one portion onto a sheet of parchment paper and lay another sheet on top. Using a rolling pin or your hands, press and flatten the meat between the two sheets as thin and even as possible. Repeat with the second portion. Transfer both to a baking sheet and bake at 400°F for 20 minutes.
  6. While the gyro meat is baking, roll out your dough into small rounds. Grill on medium heat for about 3 minutes per side until you get those char marks and the bread is cooked through.
  7. Remove the meat from the oven and let it rest for 5 minutes. Peel back the top layer of parchment and slice the meat into thin strips.
  8. Spread tzatziki onto the warm flatbread. Layer on the lettuce, tomatoes, and sliced meat. Fold in half and enjoy.

Notes

Use homemade or store-bought tzatziki; both work great here.

Optional: Add red onion, feta, or fresh herbs.

For the flatbread, you have options. Grab store bought pita and throw it on the grill for about 2 minutes per side to get those char marks and warm it through. Or make it from scratch with my homemade flatbread recipe linked here!
