This Ham & Potato Soup has been a favorite in our family for over 30 years! Now I make it gluten, dairy and sugar free and it still has all the deliciousness of my original recipe! Loaded with little bites of potato, sweet carrots and savory ham all in a creamy broth thickened with potatoes! If you are making ham over the holidays, save some to make this soup and thank me later!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Melt ghee in a large pot
  2. Add onions & celery, cook till translucent
  3. Add garlic, stirring one minute
  4. Add 4 cups of broth & half the potatoes
  5. Bring to a boil & cook till potatoes are soft
  6. Immersion blend (or high speed blender) till creamy
  7. Add remaining broth, ham, carrots, potatoes & spice
  8. Simmer till potatoes & carrots are tender
  9. Add coconut cream (or almond milk) & simmer 10 minutes
