High Protein Patriotic Ice Cream Sandwiches
Gluten free, dairy free, refined sugar FREE!
I used my incredibly soft and chewy protein cookies, and sandwiched them between a simple creamy protein ice cream!
Ingredients
- 1 cup1 cup1 cup Oat Flour

- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder

- 1 Tbsp1 Tbsp1 Tbsp Arrowroot Flour
- .5 tsp.5 tsp.5 tsp Baking Soda
- .5 tsp.5 tsp.5 tsp Sea Salt

- 3 Tbsp3 Tbsp3 Tbsp Coconut Oil, Melted
- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup

- 3 Tbsp3 Tbsp3 Tbsp Applesauce, Unsweetened
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 2 Tbsp2 Tbsp2 Tbsp Dark Chocolate Chips

- 1 cup1 cup1 cup Coconut Cream

- 2 Tbsp2 Tbsp2 Tbsp Cashew Butter

- .25 cup.25 cup.25 cup Vanilla Protein Powder

- 3 Tbsp3 Tbsp3 Tbsp Pure Maple Syrup

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- * Preheat oven to 350°F.
- * Whisk together oat flour, pea protein, arrowroot, baking powder, and salt.
- * Add coconut oil, maple syrup, applesauce, and vanilla.
- * Chill 10–15 minutes — pea protein thickens slightly as it absorbs liquid
- * Fold in chocolate chips
- * Scoop 2 tbsp dough balls, flatten slightly.
- * Press chocolate gems on top of the cookies so they're vibrant and visual
- * Cook for 8-10 minutes
- * Cool 10 minutes and move to a cooling rack
- Blend ice cream ingredients together for 10-15 seconds (don't over blend or you can cause the fat to separate and curdle)
- Pour into a small dish
- Freeze for 3 hours, and if able, stir at the 45 minute mark x2 to keep it extra creamy
- Scoop onto your cookies, dip in crushed chocolate gems, and enjoy!
