I need to have something sweet almost every night 🙃. If you’re like me, these little treats make an excellent little snack packed with protein and antioxidants!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a small bowl, mix together yogurt, peanut butter, and honey
  2. Using a cookie dough scoop (or a small spoon), scoop small balls on a parchment-lined baking sheet
  3. Smack the sheet against the counter to flatten a bit
  4. Freeze for about 2 hours or until set
  5. Mix chocolate chips and coconut oil in another small bowl and microwave 30 seconds at a time until shiny and melted
  6. Dip each yogurt cookie into the melted chocolate
  7. I topped mine with flake salt and crushed pecans, or you can leave it plain
  8. Freeze for another hour or so until set
  9. Enjoy!
