  1. In a small bowl, sprinkle gelatin over ¼ cup cold water and let it sit for 5 minutes to bloom.
  2. In a saucepan over medium heat, combine sugar, honey (or maple syrup), and ¼ cup hot water.
  3. Stir until dissolved, then stop stirring and let it reach 240°F (soft-ball stage) using a candy thermometer
  4. Remove syrup from heat and whisk in the bloomed gelatin until fully dissolved.
  5. Using a stand or hand mixer, beat the mixture on high speed for 5-7 minutes until light, fluffy, and glossy.
  6. Add vanilla extract, salt, and beet powder (or food coloring) and mix until combined.
  7. Use immediately or store in an airtight container in the fridge for up to 1 week.
  8. If it firms up too much, re-whip before using.
