Homemade Pink Marshmallow Fluff
Light, fluffy, and naturally pink, this homemade marshmallow fluff is perfect for spreading, dipping, or topping your favorite treats! No corn syrup needed, and it's easy to make with just a few simple ingredients.

- .25 cup.25 cup.25 cup Water, cold water
- 1 Tbsp1 Tbsp1 Tbsp Premium Gelatin Powder (unflavored) - Further Food
- .5 cup.5 cup.5 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 2 Tbsp2 Tbsp2 Tbsp Maple Syrup, Pure
- .25 cup.25 cup.25 cup Hot Water
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 1 Tbsp1 Tbsp1 Tbsp Red Beet Powder, or natural red food coloring
- 1 pinch1 pinch1 pinch Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a small bowl, sprinkle gelatin over ¼ cup cold water and let it sit for 5 minutes to bloom.
- In a saucepan over medium heat, combine sugar, honey (or maple syrup), and ¼ cup hot water.
- Stir until dissolved, then stop stirring and let it reach 240°F (soft-ball stage) using a candy thermometer
- Remove syrup from heat and whisk in the bloomed gelatin until fully dissolved.
- Using a stand or hand mixer, beat the mixture on high speed for 5-7 minutes until light, fluffy, and glossy.
- Add vanilla extract, salt, and beet powder (or food coloring) and mix until combined.
- Use immediately or store in an airtight container in the fridge for up to 1 week.
- If it firms up too much, re-whip before using.
