Indian Street Food (Chaat) Breakfast Waffles
These Indian Street Food (Chaat) Breakfast Waffles are everything you could want for breakfast on a Sunday: waffles, eggs, spicy, sweet, savory, tangy...all of the flavors! This flavor bomb took me 30 minutes to make and is so healthy and satisfying. Can't wait for you to try this!
Ingredients
Waffles
- .5 cup.5 cup.5 cup Sweet Potato Purée
- 1 cup1 cup1 cup Almond Meal
- .5 cup.5 cup.5 cup Arrowroot Flour, (see notes)
- 222 Eggs
- 1 tsp1 tsp1 tsp Cumin, Ground, ground
- 1 tsp1 tsp1 tsp Coriander, Ground
- .5 tsp.5 tsp.5 tsp Baking Soda
- .5 tsp.5 tsp.5 tsp Chaat Masala
- .25 tsp.25 tsp.25 tsp Salt
- 1 Tbsp1 Tbsp1 Tbsp Coconut Oil, melted
Toppings/Garnishes
- Creamy Cilantro Chutney / Avocado Chutney (click for recipe), (homemade or storebought)
- Paleo Tamarind Date Chutney (Sweet Indian Chutney) (click for recipe), (homemade or storebought)
- Red Onion, chopped
- .25 tsp.25 tsp.25 tsp Cumin, Ground
- 2-32-32-3 Eggs, (one per serving)
- Jalapeño Pepper, chopped (or chopped Serrano chili)
- pinch pinch pinch Coriander, Ground
- pinch pinch pinch Cayenne Pepper, or red chili powder
- Cilantro, chopped
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a mixing bowl whisk together sweet potato puree, eggs, and melted coconut oil. Once mixed, add almond flour, baking soda, coriander, cumin, chaat masala, and salt.
- Heat your waffle maker. Place batter in a waffle maker and let cook. Remove waffle from waffle maker when it's golden brown. I have a mini waffle maker so I used 2 tbsp of batter to make one waffle. It took 2 minutes of cook time for each waffle.
- Meanwhile, fry up a few eggs with just salt and pepper (one egg per serving of waffles). I kept my yolks runny, but cook yours as desired.
- Whisk together the plain yogurt and 1/4 tsp ground cumin to top the waffles, along with other preferred garnishes and toppings.
- Place 2-3 waffles on a plate. Top with one fried egg, red onions, and generous amounts of cilantro chutney, tamarind chutney, and a drizzle of yogurt. Add a pinch of coriander powder and red chili over waffles, and garnish with fresh chopped cilantro. Also, garnish with a few thin slices of jalapeño or Serrano chilies.
- Serve hot!
Notes
Note: if you don’t have arrowroot flour or powder on hand you can leave it out but then reduce sweet potato purée to 1/4 cup otherwise waffles will not be as crispy.
