Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Coat your sweet potato fries with olive oil, salt, and pepper. Place them in the air fryer for 20 minutes at 400 degrees, being sure to shake them every few minutes. If you are using the oven, place the coated fries evenly spaced on a sheet pan. Cook on 400 for 20-25 minutes or until slightly crispy.
  2. While the sweet potato fries are cooking, heat a pan to medium heat with 1 tbsp avocado oil. Cook your mushrooms, green peppers, and onions in the pan for 5 minutes.
  3. Once your veggies are cooked, crack 2 eggs into the same pan and cook them until they are over easy (or to your preference).
  4. Once the fries are done, put those as your bottom layer on a plate. Then add your mushrooms, green peppers, and onions next. Finally, top with your eggs. Push some hot sauce on top and enjoy!

Notes

Use your favorite kind of potato or what you have on hand. Make sure you have some hot sauce to top it! Use any veggies you like or have to make this your own. If you don't like eggs, you can use sausage or ground meat for protein.

Does the turkey bacon go in the skillet, or is it a side?
