Paleo Almond Joys (Edit recipe)

Almond Joys are one of my favorite candy bars out there! This Paleo twist on them is very easy to make and is so delicious. These are the perfect treat to have out during the holiday season or just to keep in your fridge when you are craving something sweet. I like to make them bite sized so I can just pop them in my mouth.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Pour chocolate into a bowl along with coconut oil. Microwave for 30 seconds, then stir- repeating until chocolate is completely melted (about 2 minutes total.)
  2. Fill silicone molds 1/3 of the way full with melted chocolate. Refrigerate for 10 minutes.
  3. While chocolate is refrigerating, combine coconut butter and shredded coconut into a small bowl. If your coconut butter is solidified, be sure to microwave for 30 seconds at a time and stirring until it is in liquid form.
  4. After 10 minutes, if the chocolate is hardened, fill each mold another 1/3 full of the coconut mixture.
  5. Then, top the final 1/3 with chocolate (you may need to microwave your chocolate for a short time again to warm it back up).
  6. Add an almond on top and cover with a thin layer of chocolate.
  7. Refrigerate for another 10 minutes then enjoy!!

Notes

Be sure to store these in the refrigerator. // You can use any size mold, although I like bite size chocolates so I used a small mold.
