loaded steak gyro bowls
an americanized take on the classic gyro (because I never pronounce it right) — but make it a grain-free, protein-packed bowl loaded to the brim 🥩🥒🧄
tender gyro-seasoned steak, grain-free simple mills pita crackers, bold horseradish hummus (inspired by the trader joe’s one i was obsessed with in college), fresh mediterranean salad, & creamy greek yogurt tzatziki to tie it all together.

Ingredients
gyro seasoned steak:
- 1 Tbsp1 Tbsp1 Tbsp Avocado Oil
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 1 Tbsp1 Tbsp1 Tbsp Red Wine Vinegar
- 1 Tbsp1 Tbsp1 Tbsp Super Gyro Seasoning - Primal Palate

- 2 lb2 lb2 lb Sirloin Steak, or steak cut of choice

horseradish hummus
- classic hummus (click for recipe)
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Horseradish

- 0.5 tsp0.5 tsp0.5 tsp Cowboy Salt - Texas Salt Co.

mediterranean salad
- 1 cup1 cup1 cup English Cucumber
- 1 cup1 cup1 cup Tomato, Cherry

- 0.25 cup0.25 cup0.25 cup Peperoncini Peppers
- 0.25 cup0.25 cup0.25 cup Kalamata Olives

- 0.25 cup0.25 cup0.25 cup Feta Cheese
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Peperoncini Juice

- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto

- 1 - 2 tsp1 - 2 tsp1 - 2 tsp Super Gyro Seasoning - Primal Palate

greek yogurt tzatziki sauce
- 0.5 - 1 cup0.5 - 1 cup0.5 - 1 cup Plain Greek Yogurt
- 0.25 cup0.25 cup0.25 cup English Cucumber, finely grated
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 1 Tbsp1 Tbsp1 Tbsp Capers, the juice
- 1 Tbsp1 Tbsp1 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto

- 1 Tbsp1 Tbsp1 Tbsp Dill, Fresh, or 1 t dried dill
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder

- 0.5 tsp0.5 tsp0.5 tsp Sea Salt

- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Water, to reach desired consistency
for serving
- Himalayan Salt Veggie Pita Crackers - Simple Mills
- Basil, Fresh, or fresh herbs of choice

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
gyro seasoned steak
- to a bowl, make marinade by mixing together avocado oil, lemon juice, red wine vinegar, & gyro seasoning.
- add steak to a zip-lock bag & pour marinade over top.
- marinate for at least 1 hour, up to 12.
- preheat grill to 450-500.
- grill steaks for 4-5 minutes on each side for medium-rare, or until reaches internal temperature of ~130-135°F.
- remove from grill, cover loosely with foil, & let rest for 10 full minutes (don’t skip this!).
- slice against the grain & enjoy!
horseradish hummus
- follow my instructions for making hummus + add in horseradish & cowboy salt when blending.
- refrigerate until ready to serve.
mediterranean salad
- in a bowl, combine all ingredients; refrigerate until ready to serve.
greek yogurt tzatziki sauce
- in a bowl, combine all ingredients; refrigerate until ready to serve.
- building your bowl:
- to a plate or bowl, layer: horseradish hummus → sliced gyro seasoned steak → pita crackers → mediterranean salad → tzatziki sauce → fresh herbs + feta.
