Matcha Chia Pudding Parfait
This chia pudding parfait combines energizing matcha green tea with the tropical flavors of mango and coconut. Full of vibrant colors and creamy layers, it makes a delightful and refreshing breakfast or snack!
Ingredients
Matcha Chia Pudding
- 0.25 cup0.25 cup0.25 cup Chia Seeds
- 1 cup1 cup1 cup Soy Milk, or coconut milk
- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup, or agave or sweetener of choice
- 2 tsp2 tsp2 tsp Matcha Green Tea Powder
- 1 tsp1 tsp1 tsp Vanilla Extract
Layers
- 1 whole1 whole1 whole Mango, diced
- 1 cup1 cup1 cup Coconut Milk Yogurt
- 1 Tbsp1 Tbsp1 Tbsp shredded Coconut

- To a jar or lidded container, add chia seeds, soy milk, maple syrup, matcha powder, and vanilla. Put the lid on and shake vigorously until well combined, with no clumps of matcha powder. Alternatively, stir ingredients thoroughly in a bowl. Let sit for 10 minutes, then shake or stir again so that the chia seeds don’t stick together. Cover and refrigerate overnight or at least 2 hours.
- When ready to eat, assemble in serving jars or bowls with alternating layers of chia pudding, diced mango, and coconut yogurt. The recipe makes 2 servings. Top with shredded coconut. Enjoy!
Notes
Store chia pudding, with layers assembled or separate, in an airtight container or jar for up to 5 days.
