Matcha Cookies (GF)
If you love Matcha, you'll love these cookies. Try them plain, with jelly or even sesame seeds.
Ingredients
- 1.5 cups1.5 cups1.5 cups Gluten Free 1-to-1 Baking Flour (Bob's Red Mill)
- 1 whole1 whole1 whole Egg
- 1 whole1 whole1 whole Egg Yolk
- 1 Tbsp1 Tbsp1 Tbsp Matcha Green Tea Powder, Ceremonial grade
- 0.5 cup0.5 cup0.5 cup Butter, Unsalted
- 0.5 cup0.5 cup0.5 cup Granulated White Sugar
- 0.5 cup0.5 cup0.5 cup Brown Sugar
- 1 Tbsp1 Tbsp1 Tbsp Cornstarch
- 1 tsp1 tsp1 tsp Vanilla Extract
- 0.5 tsp0.5 tsp0.5 tsp Salt
- 1 tsp1 tsp1 tsp Baking Soda

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium bowl add room temperature butter and sugar
- Cream with a hand mixture until smooth
- Add egg and egg yolk and mix until smooth
- In a separate bowl mix flour, baking soda, Cornstarch and salt
- Sift Matcha powder into the dry ingredients and whisk
- Add dry ingredients to wet ingredients
- Use hand mixer and combine
- Use a cookie scoop and place on baking sheet
- Refrigerate for 20 minutes
- *Optional roll in cinnamon or sesame seeds
- Bake at 350 degrees Fahrenheit for 8 minutes

* you can also turn these into thumbprint cookies with a jelly of your choice
