Meatballs and Marinara
Sometimes you need a classic comforting dish that warms you up from the inside. These meatballs are filled with flavor from the garlic and herbs and can be cooked in the oven or air fryer. They are paired with a super simple and easy classic marinara sauce that comes together in under 10 minutes. I like to eat this dish with roasted vegetables, but it would be perfect served on gluten-free pasta or zoodles.
Ingredients

- 1 Tbsp1 Tbsp1 Tbsp Almond Flour
- 1 whole1 whole1 whole Egg
- 9 cloves9 cloves9 cloves Garlic, minced
- 0.25 cup0.25 cup0.25 cup Parsley, fresh, minced
- 1 Tbsp1 Tbsp1 Tbsp Nutritional Yeast
- 2.5 tsp2.5 tsp2.5 tsp Italian Seasoning
- 2 tsp2 tsp2 tsp Sea Salt
- 0.75 tsp0.75 tsp0.75 tsp Black Pepper
- 0.5 cup0.5 cup0.5 cup Yellow Onion, finely chopped
- 15 oz15 oz15 oz Crushed Tomatoes
- 3 Tbsp3 Tbsp3 Tbsp Extra Virgin Olive Oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium bowl, add the ground beef, almond flour, egg, 3 minced garlic cloves, parsley, nutritional yeast, 1 teaspoon of Italian seasoning, 1 teaspoon of sea salt, and ½ teaspoon of pepper.
- Mix everything thoroughly and use a spring-loaded ice cream scoop to form balls of the meat mixture.
- To bake in the oven- preheat to 400 degrees. Line a baking sheet with parchment paper and place the meatballs evenly spaced on the pan. Bake in the oven for 17-20 minutes.
- To bake in the air fryer- place the meatballs in the basket and bake at 370 degrees for 8-10 minutes.
- While the meatballs cook, add the onion, 6 minced garlic cloves, and olive oil to a large sauté pan and cook on medium-low for 4-5 minutes. The onion should be soft and translucent.
- Add the crushed tomatoes, 1 teaspoon of sea salt, ¼ teaspoon of black pepper, and 1 ½ teaspoon of Italian seasoning. Bring the marinara to a simmer, making sure to stir often to prevent it from burning.
- Remove the marinara from the heat and add the cooked meatballs.
- Serve with roasted vegetables or gluten-free pasta.
