Ingredients

- 4.25 oz4.25 oz4.25 oz Mediterranean Inspired Flavor Starter Sauce - Mesa de Vida, half a jar, Mesa de Vida
- 1 head1 head1 head Romaine Lettuce, or lettuce of choice, chopped
- 0.5 cup0.5 cup0.5 cup Red Onion, peeled and diced
- 0.5 cup0.5 cup0.5 cup Green Olives, cut in half
- 0.5 cup0.5 cup0.5 cup Kalamata Olives, cut in half
- 1 cup1 cup1 cup Grape Tomatoes, cut in half or cherry tomatoes cut in 1/4 if large
- 1 cup1 cup1 cup Cucumber, diced
- 0.5 cup0.5 cup0.5 cup Feta Cheese, crumbled, see note
- 2 Tbsp2 Tbsp2 Tbsp Flat Leaf Parsley, chopped
- 2 Tbsp2 Tbsp2 Tbsp Olive Oil
- 0.5 cup0.5 cup0.5 cup Avocado Oil Mayonnaise, I like Chosen Foods
- 4.25 oz4.25 oz4.25 oz Mediterranean Inspired Flavor Starter Sauce - Mesa de Vida, Mesa de Vida, half of jar
- 2 Tbsp2 Tbsp2 Tbsp Lemon Juice, I like fresh squeezed
- 0.25 cup0.25 cup0.25 cup Extra Virgin Olive Oil
- 1 tsp1 tsp1 tsp Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a small bowl combine dressing ingredients, whisk well and set aside
- In another bowl, marinate chicken thighs in half a bottle of the Mediterranean Sauce for up to two hours (in the refrigerator)
- Heat grill and add 2 tablespoon olive oil (if using Blackstone Grill or brush grates with oil)
- Add chicken and cook 5 minutes each side or till temperature reads 165 degrees at the thickest part. Remove and set aside.
- Meanwhile assemble your salad ingredients either in one large serving bowl or four individual bowls
- Chop chicken pieces into cubes and place on salad
- Pour dressing over and toss well
- Enjoy!
