- 333 Zucchini, of similar size
- 1 cup1 cup1 cup baba ganoush (click for recipe)
- 1/2 lb1/2 lb1/2 lb Ground Lamb - US Wellness Meats

- 1 lb1 lb1 lb Ground Chicken

- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Za'atar Seasoning
- 1 tsp1 tsp1 tsp Smoked Paprika
- 2 Tbsp2 Tbsp2 Tbsp Classic Monkfruit Sweetener with Allulose (White Sugar Replacement) - Lakanto

- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 1 cup1 cup1 cup Chickpeas, or any beans you like

- 1/2 cup1/2 cup1/2 cup Tomato, Cherry, diced

- 1/2 cup1/2 cup1/2 cup Feta Cheese
- 1/2 cup1/2 cup1/2 cup Pomegranate

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 400.
- cut zucchini in half lengthwise, then scoop out the center to create a βboatβ.
- add a little oil, salt, & pepper to zucchini, then place on a sheet pan & bake for 15 minutes while preparing remaining ingredients.
- while zucchini is cooking, add ground meat to a skillet & brown.
- mix in zaβatar seasoning, smoked paprika, monk fruit, & lemon juice; simmer for 5-6 minutes.
- combine cooked meat, beans, tomato, & baba ganoush. feta, & pomegranate.
- spoon mixture into zucchini boats, then sprinkle with feta & pomegranate on top.
- bake for another 20-25 minutes or until zucchini is tender; option to broil for last 2-3 minutes to get cheese nice & crispy.
- drizzle with balsamic vinegar & sprinkle on mint + red pepper flakes.
