pesto stuffed zucchini boats

these zucchini boats are stuffed with protein, sautéed veggies, creamy pesto, & melty cheese for an easy dinner that’s packed with flavor + good stuff.

Ingredients
choose a protein
- 1 lb1 lb1 lb oven-baked chicken thighs (click for recipe)
- 1 lb1 lb1 lb oven-baked turkey tenderloin (click for recipe)
- 1 lb1 lb1 lb Ground Chicken, or ground meat of choice, cooked

- 1 lb1 lb1 lb Tuna, Canned, drained

zucchini boats
- 444 Zucchini, of similar size
- 2 cups2 cups2 cups sautéed frozen vegetables (click for recipe), I used peppers, onions, & mushrooms
- 1/2 cup1/2 cup1/2 cup basil pesto (click for recipe)
- Mozzarella Cheese
- Parmesan Cheese

- Balsamic Vinegar

- Red Pepper Flakes

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 400.
- cut zucchini in half lengthwise, then scoop out the center to create a “boat”.
- add a little oil, salt, & pepper to zucchini, then place on a sheet pan & bake for 15 minutes while preparing remaining ingredients.
- choose any pre-cooked protein you like, saute up any veggies, & make a batch of pesto.
- combine protein, veggies, pesto, & mozzarella cheese.
- spoon into zucchini boats, then sprinkle parmesan cheese on top.
- bake for another 20-25 minutes or until zucchini is tender; option to broil for last 2-3 minutes to get cheese nice & crispy.
- drizzle with balsamic vinegar & sprinkle on red pepper flakes.
