Mini Banana Bread Loaves
These mini Banana Bread loaves are a family favorite. Enjoy any time of the day - we love adding mini chocolate chips!
Ingredients
- 0.333 cup0.333 cup0.333 cup Classic Monkfruit Sweetener (with Erythritol) - Lakanto
- 0.5 cup0.5 cup0.5 cup Coconut Oil
- 2 whole2 whole2 whole Pastured Eggs
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 2 whole2 whole2 whole Banana, Ripe
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Ceylon Cinnamon
- 1.25 cups1.25 cups1.25 cups All Purpose Flour
- 1 tsp1 tsp1 tsp Baking Soda
- 1 tsp1 tsp1 tsp Sea Salt
- 1 cup1 cup1 cup Milk Chocolate Chips (No Sugar Added) - Lakanto, (Optional)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350F. Spray mini loaf pan with avocado oil.
- Using a handheld mixer, combine coconut oil, sugar, and eggs.
- Add in yogurt, mashed bananas (the more ripe, the sweeter!) and blend.
- Gradually mix in cinnamon, flour, baking soda, and salt.
- Spray mini loaf pan with a little bit of avocado oil, fill pan and top with mini chocolate chips.
- Bake for 30 minutes.
Notes
For this large mini loaf pan, double the recipe! Only use 3/4 cup oil and 1.5 tsp of salt🤍
Icing (optional)
1/2 cup powdered sugar (I use monk fruit) + 3/4 Tbsp almond milk
