Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350F. Spray mini loaf pan with avocado oil.
  2. Using a wooden spoon or whisk, combine mashed bananas (the more ripe, the sweeter!), maple sugar, avocado oil, eggs, yogurt, and vanilla extract. Mix until well combined.
  3. In a separate bowl, mix together flour (I like to sift flour but you don’t have to!), baking soda, baking powder, cinnamon, and sea salt.
  4. Gradually and dry ingredients to wet mixture, stirring gently until just combined, don’t overmix.
  5. Fold in chocolate chips (optional) and pour batter into mini loaf pan or muffin pan.
  6. Bake for 18-25 minutes. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Icing (optional)

1/2 cup powdered sugar (I use monk fruit) + 3/4 Tbsp almond milk
