Cinnamon Apple Oat Muffins (Edit recipe)

Sweetened with dates rather than sugar. Twelve of them soak in boiling water and go into the wet ingredients, which is what makes these taste richer than the ingredient list suggests. Whole wheat pastry flour and sprouted oats do the rest. Yogurt and applesauce both go in, so they stay soft for days instead of drying out by the second morning. Coconut yogurt works if you need them dairy-free.
