Peanut Butter Buckeyes

Ingredients
- 1/2 cup1/2 cup1/2 cup Medjool Date Syrup
- 1 cup1 cup1 cup Peanut Butter
- 2/3 cup2/3 cup2/3 cup Coconut Flour
- 1 tsp1 tsp1 tsp Vanilla Extract
- 1/2 cup1/2 cup1/2 cup Dark Chocolate Chips
- 1 Tbsp1 Tbsp1 Tbsp Coconut Oil
- 1 pinch1 pinch1 pinch Sprinkles, for each buckeye

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium bowl, mix together the peanut butter, date syrup, coconut flour, and vanilla extract until a sticky, but moldable dough forms.
- Pop the peanut butter mixture into the fridge to chill for 20-25 minutes.
- While the peanut butter mixture chills, heat the chocolate chips and coconut oil in a small saucepan until melted.
- Grab a cooking sheet and line with parchment paper.
- Remove the mixture from the fridge and roll into even 1 inch balls. Dip each ball halfway in the chocolate mixture and place on lined cookie sheet. Add sprinkles the top then allow the buckeyes to harden before serving.
