This super simple Peanut Butter Protein Fudge is perfect for that mid-day sweet fix! Made with only three ingredients and loaded with protein and healthy fats to keep you satisfied, there is also a simple chocolate ganache topping that is optional - but totally delicious!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Combine peanut butter, coconut oil and protein powder in a bowl.
  2. Taste and add maple syrup to sweeten, if needed.
  3. Pour fudge into lined loaf pan or ice cube tray mold.
  4. Freeze for 10 minutes to harden.
  5. Heat coconut cream in a microwave safe bowl for 45 seconds.
  6. Add chocolate and let sit for 5 minutes.
  7. Stir ganache until smooth.
  8. Pour ganache over peanut butter fudge.
  9. Chill fudge until firm, then slice into squares.

Notes

The maple syrup might not be needed if your protein powder is sweetened. Taste before adding any! The ganache layer is optional, but adds a fun element! Store your fudge in the freezer to keep it firm. Allow it to sit at room temperature for a few minutes to soften.
