oh & IMO the best part are the crispy sardines glazed in a strawberry balsamic glaze—salty, crunchy, sweet, & packed with omega-3 goodness. 😮💨
layered on golden flatbread with sautéed veggies, parmesan, & herby mint pesto (or whatever herbs are overflowing your garden 🌿).
it’s fresh, bright, & full of peak summer flavor in every bite.
Ingredients
strawberry balsamic glaze
- 1 cup1 cup1 cup mixed berry compote (click for recipe), strawberry or flavor of choice
- 1/4 cup1/4 cup1/4 cup Crushed Strawberry Vinegar - Kosterina

flatbreads
- Multi-Purpose Keto Bread Mix - Good Dee's
- Sardines, Canned, drained & patted dry

- basil pesto (click for recipe), using any herbs
- sautéed frozen vegetables (click for recipe), I used peppers, onions, & mushrooms
- Prosciutto, or bacon, finely chopped
- Parmesan Cheese, shredded

- Herbs, Fresh
- Red Pepper Flakes

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- first, make my homemade GF flatbreads (following the instructions in the notes OR use store-bought GF flatbreads).
- increase oven temperature to 400.
- follow my recipe for mixed berry compote, adding balsamic vinegar.
- transfer glaze to a bowl & cool.
- drain & pat dry your canned sardines.
- brush your sardines with a generous amount of glaze, then bake for 15-20 minutes.
- add pesto on top flatbread, then layer on sautéed veggies, crispy sardine, prosciutto, & parmesan.
- bake flatbreads for ~10 minutes, with option to broil for 2-3 minutes.
- garnish with herbs, red pepper flakes, & anything else your heart desires!
