Salted Caramel Cookie Dough (gf / vegan / high protein)
Sweet, salty and healthy for you too! This easy Salted Caramel Cookie Dough recipe is secretly healthy, but no one will ever know. Made without any grains or flour, this cookie dough is made from chickpeas, which makes it a great high fiber, high protein treat.
Ingredients
- 15 oz15 oz15 oz Chickpeas, rinsed & drained
- 5 whole5 whole5 whole Medjool Dates, soaked for one hour in hot water
- 0.5 cup0.5 cup0.5 cup Cashew Butter
- 0.5 tsp0.5 tsp0.5 tsp Sea Salt
- 0.5 tsp0.5 tsp0.5 tsp Pure Vanilla Extract
- 0.5 cup0.5 cup0.5 cup Pascha 55% Organic Vegan Semi-Sweet Dark Chocolate Chips

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cover dates with hot water and soak for at least an hour to soften. Drain and set aside.
- After rinsing and draining chickpeas, pinch off skins by holding chickpea in your index finger and thumb. Skin will easily pinch off.
- Add chickpeas, dates, nut butter, vanilla, and sea salt to a blender.
- Blend on high until smooth.
- Stir in chocolate chips.
- Dough will firm up as it chills.
Notes
"Peeling" chickpeas isn't necessary, but it really helps the texture to be smooth! If you don't have dates, you can use 2-4 tablespoons of maple syrup
