Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350 degrees F.
  2. Grease a loaf pan with oil or line with parchment paper.
  3. In a medium sized bowl, combine the eggs, maple syrup, oil, nut milk and apple cider vinegar. Whisk until combined.
  4. To the same bowl, add the tapioca starch, coconut flour, flax seed meal, baking powder, baking soda, and salt. Mix until completely combined.
  5. Pour the bread batter into the greased loaf pan and place in the oven. Bake for 45 minutes or until the top of the bread is crusty and golden brown. If you touch the center of the loaf, it should feel hard and hollow- that's how you know it's baked.
  6. Once baked, remove from the oven and allow to cool for 10-15 minutes before cutting.
  7. Once cut, smear on a slab of butter and enjoy!

Notes

If the bread is a day or two old, it's perfect for making croutons. To make croutons, cut the bread into ½ inch cubes, toss in olive oil, minced garlic, Italian seasoning, black pepper, and salt. Spread out on a baking tray and bake at 350 degrees for about twenty minutes. The croutons should be golden brown and crispy. Allow the croutons to cool completely before using. You can store the croutons in a closed container in a dry, cool place for about a week.
