Apple Pecan Muffins
These muffins are made with almond flour and applesauce and topped with a pecan crumble. They're gluten free, dairy free and paleo friendly - the perfect fall flavored treat!
Ingredients
Muffins
- 2 cups2 cups2 cups Almond Flour, (190g)

- 0.5 cup0.5 cup0.5 cup Tapioca Starch, (60g)

- 1 tsp1 tsp1 tsp Apple Pie Spice - Primal Palate

- 1 tsp1 tsp1 tsp Grain-Free Baking Powder - Otto's Naturals

- 0.5 tsp0.5 tsp0.5 tsp Baking Soda
- 0.25 tsp0.25 tsp0.25 tsp Salt

- 3 whole3 whole3 whole Eggs
- 0.75 cup0.75 cup0.75 cup Applesauce, Unsweetened
- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

Filling and Topping
- 0.333 cup0.333 cup0.333 cup Organic Sprouted Pecans - Lark Ellen Farm, finely chopped

- 3 Tbsp3 Tbsp3 Tbsp Coconut Sugar

- 1 tsp1 tsp1 tsp Apple Pie Spice - Primal Palate

Icing (optional)
- 0.333 cup0.333 cup0.333 cup Powdered Sugar, (powdered monkfruit sweetener is a great paleo option)
- 1 Tbsp1 Tbsp1 Tbsp Tapioca Starch

- 2 tsp2 tsp2 tsp Almond Milk

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 350 degrees F. Line a muffin tin with 11 muffin liners.
- In a large mixing bowl, combine the dry muffin ingredients. This includes the almond flour, tapioca starch, apple pie spice, baking powder, baking soda and salt.
- Mix in the wet muffin ingredients. This incudes the eggs, applesauce, maple syrup and vanilla. Mix until well combined.
- Make the topping and filling by combining all ingredients in a small bowl.
- Scoop a small portion of the batter into each slot of your lined muffin tin (about 1/2 inch deep).
- Sprinkle some of the filling/topping in each slot of the muffin tin, on top of the batter. You'll use about 1/2 tablespoon per muffin.
- Scoop the remaining batter in each muffin slot, covering the filling.
- Top the muffins with the remaining filling/topping mixture.
- Place the muffins in your oven and bake at 250 degrees F for 24-26 minutes.
- When done baking, cool the muffins to room temperature on a wire cooling rack.
- For the icing, combine all icing ingredients in a small bowl. Whisk until fully combined.
- Drizzle the icing over the cooled muffins.
