Saucy Chickpea & Vegetable Skillet
Ingredients
- 1/2 lb1/2 lb1/2 lb Mild Italian Sausage, (or sausage of choice, such as chicken or plant based)
- 1 cup1 cup1 cup Chickpeas, canned
- 2/3 cup2/3 cup2/3 cup Onion, diced (see notes)
- 2/3 cup2/3 cup2/3 cup Eggplant, diced (see notes)
- 2/3 cup2/3 cup2/3 cup Sweet Potato, diced (or butternut squash)
- 8.5 oz8.5 oz8.5 oz Mediterranean Inspired Flavor Starter Sauce - Mesa de Vida, or Mesa de Vida Starter Sauce of choice (1 bottle)
- Salt, to taste/health needs

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a skillet, sear sausage to golden brown over medium high-heat.
- Add remaining ingredients. Bring to a simmer, cover, lower the heat to low & cook for 25 minutes. Add a bit of broth or water if necessary.
- Serve over rice, pasta, couscous, quinoa, mashed potatoes, or with your favorite bread or tortillas on the side.
