Savory Cheddar Scallion Waffles
These savory cheddar scallion waffles are perfect for your weekend brunch. They are made with olive oil for a nice boost of healthy fats.
Ingredients
- 222 Eggs
- 1 1/2 cups1 1/2 cups1 1/2 cups Buttermilk
- 1/4 cup1/4 cup1/4 cup Extra Virgin Olive Oil
- 1 3/4 cups1 3/4 cups1 3/4 cups All Purpose Flour, unbleached
- 1/2 cup Cornmeal 1/2 cup cornmeal
- 1 tsp1 tsp1 tsp Baking Powder
- 1 1/2 tsp1 1/2 tsp1 1/2 tsp Salt
- Black Pepper, to taste
- 1 cup1 cup1 cup Sharp Cheddar Cheese, shredded
- 333 Green Onion (Scallion), thinly sliced

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Whisk the eggs, buttermilk and olive oil until combined. Then fold in the all purpose flour, yellow cornmeal, baking powder, sugar, salt and pepper. Once those ingredients are combined, fold in the cheddar cheese and scallions. Mix until combined.
- Prepare your waffle iron. I like to spray mine with cooking spray. Preheat your waffle iron to medium/high heat. Then pour as much batter into the waffle iron as the instructions allow. Cook the waffles until they are golden brown.
- Serve immediately with toppings of your choice. I used plain yogurt, crumbled bacon, jalapeños, tomatoes, avocado, chives and olive oil
