Slow Cooker Chickpea & Vegetable Soup
Ingredients

- 1/2 cup1/2 cup1/2 cup Carrots, diced (see notes)
- 1/2 cup1/2 cup1/2 cup Zucchini, diced (see notes)
- 1/2 cup1/2 cup1/2 cup White Potatoes, diced (see notes)
- 1-2 cups1-2 cups1-2 cups Vegetable Broth, (or canned coconut milk if using our Caribbean flavor sauce)
- 8.5 oz8.5 oz8.5 oz Moroccan Inspired Flavor Starter Sauce - Mesa de Vida, or Mesa de Vida Starter Sauce of choice (1 bottle)
- Salt, to taste/health needs

- Add ingredients to the slow cooker, stir to combine.
- Cover and cook on low for 4 hours.
- Serve as a stew, or over mashed potatoes, rice, couscous, quinoa, pasta, or wrapped in warm tortillas.

Feel free to replace with any veggies you have on hand or prefer, or use any ratio of the vegetables listed. // Optional: Add 1-2 cups of broth or wine if more sauce is desired. // Works great as a sauce for your Instant Pot recipes, as well! Adjust recipes for your electric pressure cooker according to the instructions.
