Spiced Apple Granola Cups (Edit recipe)

Let’s get all the Autumn feels together with these no-bake breakfast treats. 🍂 Crunchy granola combined with creamy nut butter forms our addicting cup’s base. Once frozen, we fill it with tart Greek yogurt topped with cinnamon coated cooked apples and a drizzle of sweet honey or pure maple syrup.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Line a muffin tin with silicone liners. In a food processor, combine your granola and nut butter until a crumbly mixture forms. Press the batter into the liners/ bottoms and sides. Freeze for a half hour.
  2. Into a small saucepan on medium low heat, add your coconut oil, apples, 1 tbsp pure maple syrup, cinnamon, and salt. Cook for 10 minutes until soft. Add in vanilla extract and mix well.
  3. Take your granola cups out of the freezer. Add a dollop of yogurt (optional mixed with 1tbsp maple syrup) and top with your cooked apples. Sprinkle with cinnamon + honey, and enjoy!
