Spiced Apple Granola Cups
Let’s get all the Autumn feels together with these no-bake breakfast treats. 🍂 Crunchy granola combined with creamy nut butter forms our addicting cup’s base. Once frozen, we fill it with tart Greek yogurt topped with cinnamon coated cooked apples and a drizzle of sweet honey or pure maple syrup.
Ingredients
- 3 cup3 cup3 cup Grain-Free Granola
- 0.333 cup0.333 cup0.333 cup Almond Butter
- 2 cup2 cup2 cup Plain Greek Yogurt
- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup, divided
- 111 Honeycrisp Apples, peeled, cored, and diced
- 1.5 tsp1.5 tsp1.5 tsp Coconut Oil
- 0.5 tsp0.5 tsp0.5 tsp Ground Cinnamon
- 0.125 tsp0.125 tsp0.125 tsp Salt
- 0.25 tsp0.25 tsp0.25 tsp Vanilla Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Line a muffin tin with silicone liners. In a food processor, combine your granola and nut butter until a crumbly mixture forms. Press the batter into the liners/ bottoms and sides. Freeze for a half hour.
- Into a small saucepan on medium low heat, add your coconut oil, apples, 1 tbsp pure maple syrup, cinnamon, and salt. Cook for 10 minutes until soft. Add in vanilla extract and mix well.
- Take your granola cups out of the freezer. Add a dollop of yogurt (optional mixed with 1tbsp maple syrup) and top with your cooked apples. Sprinkle with cinnamon + honey, and enjoy!
