It’s incredibly versatile; essentially, it’s just chicken marinated with a splash of citrus and plenty of taco seasoning, then baked to perfection. If you’re looking for a way to change up your chicken nights, give this one a try. You could even enjoy it over a salad! While this dish is simple to make gluten free, always ensure you're opting for a gluten free taco seasoning (if needed!), as gluten can hide in many places - spices included!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat the oven to 425°F.
  2. Cube chicken into 1-inch pieces, ensuring they are even so they cook as evenly as possible.
  3. Drizzle with 2 tbsp of olive oil, the juice of half a lime, and the taco seasoning.
  4. Mix everything together until well coated, then cover with a lid and transfer to the fridge to marinate for 30 minutes to an hour.
  5. In a baking dish, add 1 tbsp of olive oil to the bottom, then transfer the chicken in a single layer.
  6. Cook for about 20 minutes, or until the internal temperature reaches 165°F. You can give the chicken a toss halfway through.
  7. Transfer the chicken to a serving bowl, spoon on any extra juices from the cooked chicken dish, then squeeze the other half of a lime. Enjoy!

Notes

I like giving the chicken about 30 minutes to an hour to marinate in the fridge before baking. The chicken will release some juices while it cooks. I transfer the cooked chicken to a serving bowl and spoon some of the extra juice over the top for added flavor. Cook time will vary based on the size of your chicken and your oven, so make sure to cook until the internal temperature reaches 165°F. I also love adding an extra squeeze of lime before serving.
