VG Gourmet Sweet Potato Black Bean Burgers & Spicy Corn
I LOVE trying new products and lines, and the VG Gourmet line features plant-based goodies with wholesome, familiar ingredients. Whipped up some Sweet Potato Black Bean Burgers and served them up with spicy, buttery baked corn.
Ingredients
- 2 whole2 whole2 whole Hamburger Buns, I used locally baked Onion Rolls
- 2 whole2 whole2 whole VG Gourmet Sweet Potato Black Bean Burgers
- 1 whole1 whole1 whole Extra Virgin Olive Oil, For Frying
- 4 pieces4 pieces4 pieces Boston Lettuce
- 0.5 whole0.5 whole0.5 whole Red Onion, thinly sliced
- 1 whole1 whole1 whole Sriracha Mayonnaise, Any spicy mayo works
- 10 pieces10 pieces10 pieces Monterey Jack Cheese, Cut from the brick
- 2 whole2 whole2 whole Corn, Cob Corn, peeled and cut in half
- 3 Tbsp3 Tbsp3 Tbsp Butter, Unsalted, Approximately. Cubed and smashed into the corn cobs

- 2 Tbsp2 Tbsp2 Tbsp Pepperoncini In Oil
- 1 whole1 whole1 whole Green Onion (Scallion), chopped

- 1 whole1 whole1 whole Himalayan Pink Salt

- 1 whole1 whole1 whole Black Peppercorns, Ground Fresh

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 425. Lay out a large piece of tinfoil and get your cobs in the center. Smash some butter on your cobs and drop in the pepperoncini. Top with green onions and season with salt & pepper. Close up the tinfoil until your cobs are sealed and get the cobs onto a baking sheet. Once preheated, bake 25 minutes.
- For the burgers, heat some EVOO in a non-stick skillet and once heated, add your patties and cook until crisp on both sides and cooked through. Season with salt as you flip your patties. Top with 5 slices Monterey Jack each and cover your skillet until melty. Slice open your onion buns and spread both sides with spicy mayo. Place a couple pieces of lettuce and some thinly sliced red onion on the bottom. Nestle your aptties oon top, close them up and serve with two half cobs of corn each.
