Air Fryer Honey Lime Coconut Shrimp (Edit recipe)

One of my favorite ways to enjoy shrimp is having them coconut breaded, and cooking them in the air fryer makes it easy. The shrimp will get brown and crunchy without the need for deep-frying. The honey lime sauce has a sweet, salty, and tangy flavor that compliments the coconut breading. These shrimp would make an excellent appetizer, or you can use them as a main dish and serve them with any roasted or grilled vegetable.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Pat the shrimp dry with a paper towel and sprinkle with the sea salt.
  2. Set up a breading station with three bowls. In the first bowl, add the tapioca flour; in the second bowl, whisk the eggs with the water; in the third bowl, add the coconut flakes.
  3. Start with the shrimp in the tapioca flour and move through the following two stations. It’s best only to do a couple of shrimps at a time. After removing them from the coconut station, set them on a clean plate and continue the process until all the shrimp are breaded.
  4. Place the breaded shrimp in the air fryer's basket; you will probably need to cook them in 2-3 batches, depending on the size of your air fryer. Cook the shrimp at 360 degrees for 10-12 minutes.
  5. While the shrimp cooks, add the honey, coconut aminos, minced garlic, and lime juice to a small saucepan and bring to a boil, remove the sauce from the heat and set it aside.
  6. Once the shrimp is cooked, drizzle them with the sauce and serve.
