Nut Butter Brownies
These Nut Butter Brownies are an old friend. I grew up making these brownies as a kid, they were one of my favorites. I was so happy when I figured out a way last month to adjust them and make a Paleo version. They are a family favorite!
Ingredients
- .5 cup.5 cup.5 cup Peanut Butter, (see notes)

- .333 cup.333 cup.333 cup Coconut Oil, melted but not hot (or ghee)
- 1-1.5 cup1-1.5 cup1-1.5 cup Coconut Sugar, (see note below)

- .5 cup.5 cup.5 cup Almond Flour, (*OR replace all three flours with 1 cup cassava flour)

- .5 cup.5 cup.5 cup Arrowroot Flour, or tapioca flour
- 2 Tbsp2 Tbsp2 Tbsp Coconut Flour

- 222 Eggs, large
- 2 tsp2 tsp2 tsp Vanilla Extract

- 1 tsp1 tsp1 tsp Baking Powder

- .5 tsp.5 tsp.5 tsp Salt

- .75 cup.75 cup.75 cup Mini Chocolate Chips, Semi-Sweet, Enjoy Life

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Prepare your 9x13 by lining it with foil and spraying it with cooking spray. Preheat oven to 325 degrees.u00a0
- In a large bowl, combine the nut butter, ghee or oil, sugar, eggs, and vanilla. Add the baking powder, salt, and flour. Stir until combined. Stir in 1/2 cup of the chocolate chips.u00a0
- Spread batter into prepared pan, spreading it out evenly. Sprinkle remaining chocolate chips on top.u00a0
- Bake in oven for 5 minutes. Remove from oven and run a knife through the batter, forming a marble pattern and spreading the chocolate throughout. Bake another 30 minutes, or until lightly browned and cooked through.
Notes
**I try to minimize my children's sugar intake, even Paleo sugars. This recipe works with just 1 cup coconut sugar. However, if I am taking these somewhere or sharing them with those who eat more of the standard American diet, I will often use the full 1 1/2 cups of sugar,..We love these with peanut butter, but they also work with other nut butters or sun-butter for a nut-free option!
