- 1.5 lb1.5 lb1.5 lb Ground Beef

- 1/2 lb1/2 lb1/2 lb Beef Liver, may sub more ground beef

- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Chili Powder
- 1 Tbsp1 Tbsp1 Tbsp Smoked Paprika
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Oregano, Dried

- 1 tsp1 tsp1 tsp Garlic Powder

- 1 tsp1 tsp1 tsp Onion Powder

- 1 tsp1 tsp1 tsp Salt and Pepper, to taste
- 4-6 oz4-6 oz4-6 oz Tomato Paste

- 10 oz10 oz10 oz Diced Tomatoes & Green Chilies - Rotel
- 15 oz15 oz15 oz Black Beans, drained & rinsed

- 15 oz15 oz15 oz Vegan Charro Beans - Siete Foods, or another can of black beans

- 6-8 cups6-8 cups6-8 cups Chicken Broth

- 8 oz8 oz8 oz Low Carb Pasta - Kaizen Foods, I used cavatappi shape, or any legume-based pasta

- 4 oz4 oz4 oz Cream Cheese, Light
- 1/2 cup1/2 cup1/2 cup Plain Greek Yogurt
- 8 oz8 oz8 oz Cheddar Cheese, or shredded cheese of choice + more for serving

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a large skillet, saute onion, peppers, zucchini, & squash.
- cook for 6-8 minutes (if using a lot of veggies, may need to do it in batches).
- transfer veggies to crockpot, then add meat to pan & brown.
- while cooking the meat, add all seasonings & mix well.
- mix in tomato paste with meat.
- transfer cooked meat to crockpot along with remaining ingredients, except the pasta, cream cheese, greek yogurt, & cheese.
- stir chili well, then place slow cooker on high heat for 3-4 hours (or on low for 6-8 hours).
- taste & adjust seasonings as needed.
- with 20-30 minutes left, add pasta.
- stir in the cream cheese, greek yogurt, & cheese just before serving.
- top with additional cheese & enjoy!
