Mongolian Ground Beef Noodles
Everyone loves my Glass Noodle Stir Fry so much that I thought I would try something different using the glass noodles with Wellness Meats ground beef. It came out so delicious and it was all made on the grill including a side of broccoli! The beef is juicy and tender and gets mixed with green onions then all the rest of the deliciousness comes from the sauce in this Mongolian Ground Beef Noodles! I can’t wait for you to try this one.
Ingredients
- 1 lb1 lb1 lb US Wellness Meats Ground Beef (85% Lean)
- 3.5 oz3.5 oz3.5 oz Sweet Potato (Glass) Noodles
- 5 pieces5 pieces5 pieces Green Onion (Scallion), sliced, reserving some green slices for garnish
- 1 Tbsp1 Tbsp1 Tbsp Toasted Sesame Oil
- 1 tsp1 tsp1 tsp Sesame Seeds, for garnish, optional
- 0.5 cup0.5 cup0.5 cup Coconut Aminos
- 0.5 cup0.5 cup0.5 cup Beef Bone Broth, I like Kettle & Fire
- 2 Tbsp2 Tbsp2 Tbsp Rice Vinegar
- 1 tsp1 tsp1 tsp Toasted Sesame Oil
- 0.25 cup0.25 cup0.25 cup Almond Butter, extra creamy, not dry or sunbutter
- 5 pieces5 pieces5 pieces Medjool Dates, pitted and chopped
- 1 Tbsp1 Tbsp1 Tbsp Gochugaru (Korean chili pepper flakes)
- 0.5 tsp0.5 tsp0.5 tsp Chinese Five Spice, I like Primal Palate
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper
- 1 tsp1 tsp1 tsp Salt
- 1 tsp1 tsp1 tsp Arrowroot Powder

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine all sauce ingredients in a blender and blend till smooth (It will be watery but thickens when cooked up)
- Soak glass noodles in boiling water for 10 minutes, drain and set aside
- Heat grill or skillet
- Add 1 tbsp sesame oil
- Add beef and green onions, breaking beef apart and cooking till no longer pink
- Add noodles to grill and toss with beef
- Add sauce to beef and noodle mixture and mix through, cooking for a few minutes longer
- Garnish with onions and sesame seeds
- Enjoy!

I was just searching your blog for recipes using what I have on hand. With no surprise, I have 99% of the ingredients on hand, as with so many of Penny’s fantastic, no fuss recipes. I happened to see this recipe on a social media feed and my dinner dilemma was solved. I’m sure this will be just as good as Penny’s other glass noodle recipes. I’ll post back here after I make it.
I’m enjoying a bowl of this as I type this. I stopped savoring it to post this review, and it was hard to pull myself away from it. This is absolutely fantastic! The sauce is astounding flavor wise. It left a nice palate tingling sensation. I subbed chili flakes for the gochugaru, honey for the dates, and kelp noodles which held up beautufully here. I used sunbutter as it’s what I had on hand, and the sauce thickened beautifully. This is going to be on repeat without question. Another winner noodle recipe. Now, back to my food.
