Cinnamon Roll Cookies (gluten-free/vegan)
These soft cinnamon roll cookies are topped with a delicious cream cheese frosting and are gluten-free, vegan and refined sugar-free!
Ingredients
- 0.5 cup0.5 cup0.5 cup Almond Butter

- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup
- 2 Tbsp2 Tbsp2 Tbsp Coconut Sugar

- 1 whole1 whole1 whole Flax Egg (1 tbsp ground flaxseed + 2.5 tbsp filtered water)
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 0.5 cup0.5 cup0.5 cup Oat Flour

- 0.25 cup0.25 cup0.25 cup Almond Flour

- 0.5 tsp0.5 tsp0.5 tsp Cinnamon, Ground

- 0.5 tsp0.5 tsp0.5 tsp Baking Powder

- 0.5 tsp0.5 tsp0.5 tsp Baking Soda
- 2 tsp2 tsp2 tsp "Cinnamon Roll" Faux Joe Coffee Alternative (Loose Leaf) - Sip Herbals, ground into powder

- 0.25 cup0.25 cup0.25 cup Dairy-Free Cream Cheese - Kite Hill
- 1 Tbsp1 Tbsp1 Tbsp Butter, Unsalted, use dairy-free, for vegan

- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- In a bowl, whisk together almond butter, maple and coconut sugar.
- Add in egg and vanilla extract and whisk to combine.
- Stir in oat flour, almond flour, cinnamon, baking powder, baking soda and Sip Herbals.
- Scoop batter onto cookie sheet, using hands to gently flatten and shape cookies. Cookies will spread, so make sure there is some space between them.
- Bake for 10-12 minutes.
- While cookies are cooling, beat together frosting ingredients. Taste and add more maple syrup, as needed, for desired sweetness.
- Once cookies have cooled, swirl on frosting.
- Sprinkle with extra cinnamon.
Notes
Make sure both cream cheese and frosting are soft to ensure a creamy frosting.
