hoppin’ john casserole
black eyed peas are said to bring good luck in the new year, so we are bringing on the luck to start out 2025! i took a spin on the traditional southern hoppin' john dish to make a super yummy casserole!
Ingredients
- 4 whole4 whole4 whole Andouille Chicken Sausages, diced
- 12 oz12 oz12 oz Ham Steak, diced
- 666 easy baked bacon (click for recipe)
- 10 oz10 oz10 oz Bell Pepper and Onion Blend, Frozen
- 5 oz5 oz5 oz Collard Greens, finely chopped
- 15 oz15 oz15 oz Black Eyed Peas, 1 can drained & rinsed
- 10 oz10 oz10 oz Diced Tomatoes & Green Chilies - Rotel
- 1 cup1 cup1 cup Chicken Broth
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Cajun Seasoning
- 0.5 cup0.5 cup0.5 cup Sprouted Rolled Oats - One Degree Organic, ground into flour
- 1/2 cup1/2 cup1/2 cup Lupin Bean Flour
- 0.25 cup0.25 cup0.25 cup Coconut Flour
- 2 Tbsp2 Tbsp2 Tbsp Psyllium husk, Ground
- 2 Tbsp2 Tbsp2 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 tsp1 tsp1 tsp Baking Soda
- 0.25 tsp0.25 tsp0.25 tsp Real Salt - Redmond
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 222 Eggs
- 0.5 cup0.5 cup0.5 cup Water
- 4 oz4 oz4 oz Cheddar Cheese

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 350.
- to a large skillet, add chicken sausage & ham; fry until somewhat crisp.
- remove from pot, then add peppers, onions, & collard greens to saute.
- add chicken sausage, ham, & remaining ingredients to skillet.
- bring to a boil, then reduce to a simmer & let cook for 8-10 minutes while making cornbread dough.
- to make cornbread, in a bowl, combine flour, psyllium husk, monk fruit, baking soda, & salt.
- in a separate bowl, combine greek yogurt & eggs.
- mix liquid into dry mixture.
- add in milk or water, then fold in cheese.
- to a large casserole dish, add hoppin’ john mixture.
- evenly spread cornbread topping over meat mixture.
- bake casserole for 40-45 minutes or until a toothpick comes out of the cornbread mixture clean.
