Oatmeal Yogurt Cups

Ingredients
Oatmeal Cups
- 222 Banana, overripe, mashed (about 3/4 cup mashed)
- 1.5 cups1.5 cups1.5 cups Oats, Rolled
- 0.25 cup0.25 cup0.25 cup Maple Syrup, Pure
- 2 Tbsp2 Tbsp2 Tbsp Coconut Oil, melted
- 1 tsp1 tsp1 tsp Cinnamon, Ground
- 0.25 tsp0.25 tsp0.25 tsp Salt
Toppings
- 1 cup1 cup1 cup Coconut Milk Yogurt, I used plain coconut yogurt and raspberry coconut yogurt
- 0.25 cup0.25 cup0.25 cup Strawberries, diced
- 0.25 cup0.25 cup0.25 cup Blueberries
- 2 Tbsp2 Tbsp2 Tbsp Coconut Flakes, unsweetened
- 1 Tbsp1 Tbsp1 Tbsp Cacao Nibs, Organic, Raw

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 350°F. Spray the insides of a muffin pan with cooking spray or brush with melted coconut oil. If using a silicone muffin pan, you can skip this step.
- In a medium mixing bowl, add the mashed bananas, oats, maple syrup, melted coconut oil, cinnamon, and salt. Stir until well combined.
- Add the oat mixture to the muffin pan, using about 1/4 cup per well. Use a spoon to press the mixture into the bottom and sides, creating a cup shape.
- Bake for 30 minutes or until lightly golden brown. Let cool for about 5 minutes before removing from the pan to cool completely on a wire rack.
- Fill each oatmeal cup with yogurt, and top with berries, coconut flakes, and cacao nibs. Enjoy!
Notes
Store in an airtight container in the fridge for up to 3-4 days. For the best texture, leave the yogurt and toppings out and add just before serving. This will prevent the oatmeal cups from getting soggy.
