Buffalo Turkey Meatballs
These baked buffalo turkey meatballs are the perfect party appetizer. Smothered in the most incredible bbq buffalo sauce and secretly loaded with healthy zucchini, they are easy to make in under 30 minutes. Serve them as is or with a side of ranch for the greatest gameday snack.
Ingredients

- 2 lb2 lb2 lb Ground Turkey
- 2.5 cups2.5 cups2.5 cups Zucchini, shredded
- 2 whole2 whole2 whole Eggs, slightly beaten
- 2 tsp2 tsp2 tsp Barbecue Rub - Primal Palate
- 1 tsp1 tsp1 tsp Garlic Powder
- 1 tsp1 tsp1 tsp Onion Powder
- 0.5 tsp0.5 tsp0.5 tsp Salt
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper
Buffalo Sauce
- 7 oz7 oz7 oz Zucchini
- 3.5 Tbsp3.5 Tbsp3.5 Tbsp Hot Sauce
- 2 Tbsp2 Tbsp2 Tbsp Barbecue Sauce
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Maple Syrup, Pure
- 2 tsp2 tsp2 tsp Soy Sauce, can sub coconut aminos or tamari
- 1 tsp1 tsp1 tsp Lemon Juice
- 1 tsp1 tsp1 tsp White Vinegar, distilled
- 1 tsp1 tsp1 tsp Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 400ºF and prepare a large baking tray with parchment paper.
- In a clean kitchen towel or paper towel, place the shredded zucchini and squeeze out any excess liquid.
- In a large mixing bowl combine the ground turkey, drained zucchini, beaten eggs, bbq spice, garlic, onion, salt, and pepper and mix together until thoroughly combined.
- Scoop two tablespoon-sized balls of meat mixture, roll into a firm ball, and place on the prepared baking sheet. Repeat with the remaining meat mixture.
- Bake for 18-22 minutes or until they are evenly browned and cooked all the way through.
- While the meatballs are baking, prepare the sauce.
- In a microwave-safe food steamer or stove-top steam basket, steam the zucchini until fork tender.
- Place the steamed zucchini, hot sauce, bbq sauce, maple syrup, soy sauce, vinegar, and lemon juice into a food processor or blender and blend until smooth.
- Season with salt according to taste.
- Once the meatballs are baked, toss them gently in the sauce and serve hot. If desired, top with fresh parsley and feta cheese. Enjoy!
Notes
Makes approximately 3 dozen meatballs depending on the size.
