Garden fresh Radish Hemp Seed Egg Stir Fry( Indian Style)(Gluten free, whole30, Paleo)
Fresh harvested radish gives a completely different twist to your eggs. Eat them at the breakfast as a scramble or with your lunch as a stir fry! This is one recipe which is super easy to put together. And even those who don’t love radishes would fall in love with this light and delicious stir fry made with simple ingredients!
Ingredients
- 1 tsp1 tsp1 tsp Brown Mustard Seed
- 1 tsp1 tsp1 tsp Urad Dal (Black Gram), skip for Whole30
- 3 - 4 whole3 - 4 whole3 - 4 whole Radish, medium sized, grated
- 2 whole2 whole2 whole Green Chilies
- 1 whole1 whole1 whole Onion, small sized, finely chopped
- 1 tsp1 tsp1 tsp Salt

- 1 Tbsp1 Tbsp1 Tbsp Avocado Oil
- 5 - 6 whole5 - 6 whole5 - 6 whole Curry Leaves
- 2 whole2 whole2 whole Egg, gently whipped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat up a tbsp of the oil
- Add the mustard seeds and let it splutter
- Add the Urad dhal followed by curry leaves
- Add the chopped onion and sauté for a couple of minutes followed by chopped green chilli
- Grate the radish and squeeze out the juices for it. Use the juices in any other dish or to drink after diluting it
- Add the grated radish
- Sautee for a couple of minutes and cover and steam for another 3-4 minutestill the radish is cooked
- Add salt
- Add the gently whipped eggs and scramble it
- Keep stirring till most of the moisture is well absorbed
- Switch off the heat and Add the tbsp of hemp seeds
- Serve it hot for breakfast or lunch. My favorite is to eat it with a plate of steaming hot rice and spicy tangy tamarind curry
