Keto Flat Rice-less Noodles, Udon and Vermicelli
Many followers of mine have requested a tutorial on how to make flat noodles for their favourite bowl of noodle soups. This recipe is an updated version of my original keto vermicelli noodles, where I took it to the next level by turning it into keto udon and keto flat rice-less noodles.
Ingredients
- 3 cups3 cups3 cups Water
- 3 Tbsp3 Tbsp3 Tbsp Egg White Powder
- 0.5 tsp0.5 tsp0.5 tsp Sea Salt
- .5 tsp.5 tsp.5 tsp Xanthan Gum
- 2 Tbsp2 Tbsp2 Tbsp Sodium Alginate
- 7 cups7 cups7 cups Water
- 1 Tbsp1 Tbsp1 Tbsp Calcium Lactate, or calcium chloride
- 3 cups3 cups3 cups Water, hot
- 2 Tbsp2 Tbsp2 Tbsp Lemon Juice
- 1 Tbsp1 Tbsp1 Tbsp Baking Soda

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Using a high speed blender, add the filtered water, egg white powder, sea salt, xanthan gum, and sodium alginate into the container and blend on low speed.
- Increase to high speed and blend well until thoroughly mixed and mixture is thickened (about 3 minutes).
- Mix the calcium of choice into the water until dissolved.
- Pour the mixture onto a baking sheet as thinly as possible.
- In a large bowl, add calcium lactate or calcium chloride for the calcium bath. Mix until dissolved and water runs clear.
- Ladle the calcium bath onto the mixture gently, starting at the corner and gently tip the baking sheet to cover the mixture.
- Leave it to set for a couple hours on the counter or in the fridge until it is fully set.
- Use a knife to cut the noodles into strips.
- Store in the calcium bath, refrigerated until use.
- Use a wide tip and squeeze the mixture into the calcium bath while stirring the calcium bath in one direction. Noodles will form.
- At this time, the inside of the noodles have not yet set. Leave the noodles in the calcium bath for 2-3 hours refrigerated. Overnight is best since it is a thicker noodle. Store in the calcium bath refrigerated until use.
- To soften the noodles, add hot tap water to a bowl with the noodles. Then, add the baking soda and lemon use. There will be a chemical reaction. Wait approximately 6-10 minutes for the noodles to soften. Time will depend on the temperature of the hot water.
- Soften the noodles as desired by rinsing it a few times through cold water. Strain and discard the water after use.
- Noodles are now ready to be used. Serve it with your favourite noodle soup base or stir fry dishes.

I love these noodles. They taste just like the real thing and easy too make. I used these noodles the most with my spaghetti pie recipe. Delicious!
