- Prepare pitted and sliced dates by arranging on a flat tray with parchment paper (preferably a tray that will fit into your freezer).
- Add frozen banana, creamer, and vanilla extract to a high speed blender or food processor and blend until smooth, pausing to scrape down the sides as necessary.
- Add banana mixture into a piping bag or a ziploc bag with the corner cut off, and pipe about 1/2-1 tsp of banana mixture into each date.
- Moving quickly, follow up with peanut butter, spooning a layer of about 1/2-1 tsp peanut butter over the banana.
- Freeze for 5 minutes.
- Remove dates from freezer and place peanut halves on top of peanut butter mixture, 2 peanut halves per date, then gently press dates closed (as much as you can, it doesn't need to be perfect).
- Freeze for another 5-10 minutes.
- In the meantime, add chocolate chips and coconut oil to a microwave-safe bowl and microwave in 30-second increments until smooth, stirring in between.
- Gently stir in cereal until it's all evenly combined.
- Remove dates from freezer and use a fork to dip them into the chocolate/cereal mixture, taking care to make sure the dates are fully covered in chocolate on all sides, then place back onto the sheet tray.
- Sprinkle with flaky salt and freeze for another 20 minutes or until set.
- Enjoy!! Store in the freezer so the banana mixture stays frozen.
