This is my all time favvvvvourtie Thai inspired salad!! Perfect for meal prep and taking to work on those warmer days.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Mix together ingredients for the marinate, and coat chicken breast
  2. Let the chicken marinate for 1 hour
  3. Cook the chicken in the airfyer at 200 degrees Celsius for 20mins (flipping halfway)
  4. Mix all ingredients of the salad and divide into 4 containers
  5. Add 1 serve of rice noodles to each container
  6. Slice the cooked chicken and divide this between the containers as well
  7. Dress and optionally top with diced spring onion and peanuts
  8. Enjoy !
