🥗lemongrass chicken salad
This is my all time favvvvvourtie Thai inspired salad!! Perfect for meal prep and taking to work on those warmer days.
Ingredients
- 800 grams800 grams800 grams Chicken Breast
- 1 Tbsp1 Tbsp1 Tbsp Lemongrass, paste
- 1 Tbsp1 Tbsp1 Tbsp Garlic Paste
- 1 Tbsp1 Tbsp1 Tbsp Honey
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- 1 tsp1 tsp1 tsp Thai Chili Paste
- 1 tsp1 tsp1 tsp Ginger Paste
- 2 Tbsp2 Tbsp2 Tbsp Fish Sauce
- 0.50.50.5 Lime, Juiced
- 1 whole1 whole1 whole Cucumber, Thinly sliced
- 2 whole2 whole2 whole Carrots, Grated
- 3 - 4 cups3 - 4 cups3 - 4 cups Lettuce, Iceberg, Chopped
- 1 bunch1 bunch1 bunch Alfalfa Sprouts
- 300 grams300 grams300 grams Rice Noodles, Boiled (as per packet intructions)
- 2 Tbsp2 Tbsp2 Tbsp Granulated White Sugar
- 0.5 cup0.5 cup0.5 cup Water
- 0.25 cup0.25 cup0.25 cup Fish Sauce
- 1 Tbsp1 Tbsp1 Tbsp Soy Sauce
- 1 tsp1 tsp1 tsp Garlic Paste
- 1 tsp1 tsp1 tsp Thai Chili Paste
- 1 whole1 whole1 whole Lime, Juice

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix together ingredients for the marinate, and coat chicken breast
- Let the chicken marinate for 1 hour
- Cook the chicken in the airfyer at 200 degrees Celsius for 20mins (flipping halfway)
- Mix all ingredients of the salad and divide into 4 containers
- Add 1 serve of rice noodles to each container
- Slice the cooked chicken and divide this between the containers as well
- Dress and optionally top with diced spring onion and peanuts
- Enjoy !
