Ingredients

- 1 whole1 whole1 whole Cucumber, Chopped
- 2 bunch2 bunch2 bunch Rocket, (Handfuls)
- 130 grams130 grams130 grams Plain Greek Yogurt
- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Lemon Juice
- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Honey
- 1.5 tsp1.5 tsp1.5 tsp Cumin, Ground
- 0.75 tsp0.75 tsp0.75 tsp Paprika, Hungarian
- 1 tsp1 tsp1 tsp Dijon Mustard

- Preheat oven to 200°C. Toss pumpkin cubes with a little olive oil, salt, and pepper. Roast for ~25 minutes until golden
- Cook pasta as per packet instructions and drain once al dente
- Rinse the pasta under cold water, and let cool.
- In a large bowl, combine pasta, roasted pumpkin, chicken, cucumber and rocket
- Whisk together dressing ingredients in a seperate bowl, then toss through the salad.
- Split into 4 containers and enjoy!
