  1. Preheat oven to 200°C. Toss pumpkin cubes with a little olive oil, salt, and pepper. Roast for ~25 minutes until golden
  2. Cook pasta as per packet instructions and drain once al dente
  3. Rinse the pasta under cold water, and let cool.
  4. In a large bowl, combine pasta, roasted pumpkin, chicken, cucumber and rocket
  5. Whisk together dressing ingredients in a seperate bowl, then toss through the salad.
  6. Split into 4 containers and enjoy!
