4th of July Brownie Bites
These brownie bites are the perfect patriotic treat! They have a chewy brownie filling that's coated in white chocolate and topped with festive sprinkles.
Ingredients
Filling
- 1 cup1 cup1 cup Medjool Dates, pitted
- 0.333 cup0.333 cup0.333 cup Sunbutter, (or any nut butter)
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 0.333 cup0.333 cup0.333 cup Pea Protein Powder, Unflavored, (or vanilla or chocolate flavored)*

- 0.25 cup0.25 cup0.25 cup Dutch Processed Cocoa Powder

- 1 pinch1 pinch1 pinch Salt

- 1 - 2 tsp1 - 2 tsp1 - 2 tsp Water, (if needed)**
Toppings
- 1 cup1 cup1 cup White Chocolate

- 1 Tbsp1 Tbsp1 Tbsp Sprinkles, (red and blue)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Place all filling ingredients, except the water, in a food processor.
- Blend, stopping to scrape the sides as needed, until the filling forms a thick, cohesive dough. If needed, add water (1 teaspoon at a time) and blend.
- Roll the filling into balls, each about 1 tablespoon in size. You should get about 17 balls.
- Place the balls on a small baking sheet or plate and freeze for at least an hour. (This will help the chocolate topping set faster.)
- Place the white chocolate in a small, microwaveable bowl. Melt on high in the microwave at 10 second intervals, stirring between. (Make sure to just do 10 second intervals, as white chocolate burns easily in the microwave.)
- Grab the fillings from the freezer and dip them one at a time into the melted chocolate. Place them on a parchment-lined baking sheet or plate to set.
- Once the chocolate has hardened, dip the balls another time, then quickly top with festive sprinkles. (Double dipping the balls is not required, but will give you a thicker white chocolate coating.)
Notes
*I used a pea protein powder, but most plant based protein powders should work. You can use unflavored, vanilla or chocolate. **Don't add any water at first. If the dough isn't blending together as well as you would like, then add water 1 teaspoon at a time, until you get the desired texture. The filling dough should be cohesive and easy to roll into balls.
