Almond Joy Bark
This Almond Joy Date Bark is my take on the viral date bark recipe that went around. Almond Joys were my favorite candy when I was little so it made sense to try this healthier version! They are refined sugar free and the perfect Paleo treat! I used Medjool dates, Georgia Grinders cashew butter (because it's the best) and Hu sugar free chocolate for a guilt free and delicious snack. Warning....they are addicting!
Ingredients
- 20 pieces20 pieces20 pieces Medjool Dates, pitted and opened flat
- 0.5 cup0.5 cup0.5 cup Unsweetened Cashew Butter, I like Georgia Grinders, see note
- 30 whole30 whole30 whole Almonds, raw unsalted
- 1 cup1 cup1 cup shredded Coconut, unsweetened
- 1 cup1 cup1 cup Dark Chocolate Chips, I like Hu unsweetened
- 1 tsp1 tsp1 tsp Coconut Oil
- 1 pinch1 pinch1 pinch Primal Palate Kosher Flake Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Lay open dates on a piece of parchment paper in rows 4 across and 5 down
- Lay a second piece of parchment on top and place your cookie sheet on it and press it down
- Remove cookie sheet and roll the dates with a rolling pin
- Move to cookie sheet and remove top piece of parchment
- Drizzle nut butter over dates and spread with spatula covering the dates
- Place almonds in rows
- Sprinkle with coconut
- Melt chocolate chips with coconut oil in microwave
- Drizzle over top and spread with spatula
- Sprinkle with salt
- Freeze 1-2 hours
- Remove from freezer and cut into squares
- We like them best when kept refrigerated

Notes
Nut butter should be a creamier, drippy kind for ease of spreading
