Apple Walnut Chicken Salad
It's no secret I love chicken salad and this Apple Walnut Chicken Salad is another of my favorites. There is just something so delicious about crunchy apples, good for you walnuts and tangy dried blueberries all in one bite that is just so satisfying! I remember watching my Grandma count out 10 walnuts every morning and saying how good for you they are so I try to incorporate them into my diet every day! This Apple Walnut Chicken Salad makes enough for lunches for the whole week!
Ingredients
- 222 Chicken Breast, large, roasted and chopped
- 1/4 cup1/4 cup1/4 cup Red Onion, diced
- 111 Granny Smith Apple, large, diced
- 1/2 cup1/2 cup1/2 cup Organic Walnuts, chopped
- 1/2 cup1/2 cup1/2 cup Unsweetened Dried Blueberries
- 1/2 cup1/2 cup1/2 cup Mayonnaise
- 1 tsp1 tsp1 tsp Salt
- 1/2 tsp1/2 tsp1/2 tsp Black Pepper
- 1 tsp1 tsp1 tsp Thyme

- In a small bowl mix mayo, salt, pepper and thyme.
- In a large bowl add chicken, apples, walnuts and red onion.
