Asian Ground Beef Bowl (Edit recipe)

This ground beef bowl is a typical busy weekday dinner at our house. I love dishes that can be put together quickly and served all in one bowl. Although I usually eat cauliflower rice, my husband and son prefer regular rice so sometimes I make that for them in the rice cooker. Either way this is a great dish to have for those busy days.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a large skillet saute the beef on medium-high until done. Spoon out most of the excess oil.
  2. Add the oil and vegetables and let cook on medium while you prepare the rice.
  3. Rice: You can buy this in the frozen food aisle or make your own in a food processor. Put into a non-stick skillet and cook on medium. Stir periodially.
  4. Cook for about 5 minutes.
  5. Cook meat and vegetables until veggies are soft but not limp, about 6-7 minutes.
  6. Sauce: In a small bowl combine the ingredients.
  7. When the beef and vegetables are done, pour sauce onto the mix and let cook for 1 minute to heat up. Spoon the rice into a bowl and top with beef and veggies.

Notes

Our son doesn't love cauliflower rice so for him I often mix half rice and half cauliflower rice. This is an easy way to bump up the veggies but kind of hide them as well.
