Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat the oven to 450° F and line a baking sheet with parchment paper.
  2. Peel the sweet potatoes and cut off the ends. Cut in half lengthwise, and if very long, in half crosswise. Cut into 1/4" strips. Add to a large mixing bowl with olive oil, salt, and pepper. Toss until evenly coated.
  3. Arrange the fries in a single layer on the prepared baking sheet and don't overcrowd. Bake for 15 minutes, then flip the fries so they can cook evenly on all sides. Bake for 10 to 15 more minutes, or until crispy. The edges should start to brown, but be careful not to let them burn.
  4. While fries are baking, add all of the ingredients for the dip to a blender or food processor and blend until smooth. Add more salt, pepper, or lemon to taste if desired.
  5. Serve the sweet potato fries warm with the dip and enjoy!

Notes

Sweet potato fries are best served immediately but can be stored in an airtight container in the fridge for up to 5 days. Reheat in the oven for a few minutes to crisp back up. Store green goddess dip in an airtight container in the fridge for up to 1 week.
