  1. In a skillet, sear chicken to golden brown over medium high-heat.
  2. Add remaining ingredients. Bring to a simmer, cover, lower the heat to low & cook for 25 minutes, or until chicken is fully cooked. Add a bit of broth or water if necessary.
  3. Serve over rice, pasta, couscous, quinoa, mashed potatoes, or with your favorite bread or tortillas on the side.
