Did you know that chia seeds are high in basically everything good for you? They’re rich with antioxidants, protein, fiber, and calcium!! It’s basically the valedictorian of superfoods. The only problem is… getting my kids to eat it! When mixed into liquids, it becomes gelatinous, and my kids have made it abundantly clear that there’s a texture issue there. Enter my chia chocolate pudding!! Blended with simple classic chocolate pudding ingredients, texture is no longer an issue! Yay for mom hacks!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add all ingredients into a bowl and gently swirl together with a spoon to combine. Wait 15 minutes for the mixture to thicken (this will happen once the chia seeds combine with the almond milk).
  2. Add the mixture into a high-speed blender, and blend until mixture is smooth and creamy.
  3. Can enjoy immediately or if you prefer your pudding cold (like us!), place in the fridge for a few hours. Enjoy with your favorite toppings! My kids love adding granola or nuts/seeds for some texture/crunch!
