Chicken & Bacon Caesar Salad Wraps (with Pickles!)
Behold! My chicken and bacon caesar salad wrap with dill pickle! To say that I am obsessed with pickles is a complete understatement.
This super easy lunch idea came to life because I had been on some addiction to eating caesar salad every day for lunch. I thought, why not marry three things I love the most: pickles, bacon & caesar salad dressing into a functional and filling meal?! Once you try these, I promise you. You won't be able to go back.
Ingredients
Base
- 1 whole1 whole1 whole Flour Tortilla

Filling
- 5 pieces5 pieces5 pieces Lettuce, Romaine, chopped into small pieces
- 1 pieces1 pieces1 pieces Chicken Breast, chopped into small pieces (pre cooked or leftover)

- 2 Tbsp2 Tbsp2 Tbsp Bacon Bits, (frozen, pre cooked or leftover)
- 2 Tbsp2 Tbsp2 Tbsp Wonton Strips
- 1 whole1 whole1 whole Dill Pickle Slices, chopped finely

Dressing
- 2 Tbsp2 Tbsp2 Tbsp Caesar Dressing - Primal Kitchen, ( I used ready made Renées)
- 2 Tbsp2 Tbsp2 Tbsp Dill Pickle Juice

- 1 tsp1 tsp1 tsp Salt, to taste (I used Zoë Olive Oil)

- 1 tsp1 tsp1 tsp Black Pepper, to taste (I used Zoë Olive Oil)

- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil, (I used Zoë Olive Oil)

- 1 tsp1 tsp1 tsp Lemon Juice

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a bowl, mix: chicken, bacon, pickle, fried won ton & lettuce. Set aside
- In another bowl, mix caesar dressing, dill pickle juice, salt, pepper, olive oil & lemon. Set aside
- Pour dressing mix over the filling and give it a good toss
- Lay a flour tortilla on a plate and begin to fill it as much as possible
- Top with extra of anything if you wish to add more
- Fold your tortilla as you would a burrito
- Slice into half and enjoy!
Notes
Feel free to make this recipe in its meatless form as well. It tastes just as good! I like to use ready-made dressing and make it my own by adding things. It makes it that much simpler.
